The five-step torta ritual

Toast the bolillo

Split the roll, swipe with butter or mayo, then toast until the edges get loud and golden.

Lay down beans

Spread warm refried beans on the bottom half. This is flavor glue, not decoration.

Add the hero

Carnitas, milanesa, chorizo, roasted mushrooms, grilled chicken, or whatever deserves a crown.

Stack the fresh stuff

Avocado, tomato, onion, pickled jalapeños, shredded lettuce, crema, queso, and salsa.

Press, slice, celebrate

Close it, press gently, cut diagonally, and eat while the bread still crackles.
